
Striftopitaria (Twisted Pies) with Greens and Kasseri Cheese
Clean and wash the greens thoroughly. Cut them in large pieces and put them in a big strainer. Salt them generously and begin to rub the greens to take out their fluids. Leave them for 15 minutes to drain well.
Spin well the greens and transfer them to a clean bowl. Add onions (fresh and dried), chopped dill, the beaten eggs, spicy kasseri cheese and lots of freshly grounded pepper. Mix well.
Preheat oven to 180 ° C.
Spread a crust fillo pastry ZIMI PSACHNON onto the kitchen countertop and smear it with melted butter. Cover with a second crust fillo pastry and grease it too. Spread along the wide side of the crust fillo pastry, 4-5 tablespoons of the filling and roll the crust fillo pastry forming a long stick. Roll the stick and fix a volute (the shape of snail).
Grease with butter 1 individual tart pan and place there the volute. Continue with the remaining ingredients until finished.
Transfer the tart pans on a baking tray of the oven and grease with a little butter.
Bake thestrifopitaria (twisted pies) for 30-35 minutes until nicely browned.
