Easy Made Mini Pies with Greens
FOR THE FILLING:
Clean and wash the greens thoroughly.
Put a big strainer in a bowl and add there the chopped greens, the onion and the fresh onions. Salt generously and with hands start to scrub the greens in order to take out their liquids.
Sqeeze well the greens and replace them into a clean bowl. Add olive oil, feta cheese, and plenty of freshly grounded pepper. Mix well.
Preheat oven to 180 ° C.
FOR THE MINI PIES:
Strew 3-4 Sambosa leaves ZIMI PSACHNON, strips of country style fillo pastry onto kitchen countertop. Smear them with little olive oil and add 1 large spoonful from the filling on the edge of each sambosa leaf.
Fold into triangle shape and place the mini pies in a non-stick baking pan covered with baking paper.
Repeat the same procedure with the remaining ingredients.
Smear the mini pies with olive oil and bake them in preheated oven for 15-20 minutes until turned golden brown.

1 1/2 kg mountain greens (rumex, poppies, tordylium apulum, sonchus, fennel, nettles)
4-5 fresh onions, chopped
1 onion, chopped
200 g feta cheese, crumbled
1/2 cup olive oil
salt, freshly grounded pepper
