
Pizza-Muffins with Mushrooms & Halloumi
Preheat oven to 180 ° C.
In a large nonstick frying pan, put the olive oil to heat up. Add the onions and sauté for 2-3 minutes until withered.
Add the tomatoesconcasse, salt and pepper, add ½ cup of water
and lower the heat.
Let the sauce to boil for 15 minutes, until the liquids evaporate and the sauce has left only with the olive oil.
Withdraw the frying pan from the heat and let the filling to cool.

Open both ready pizza doughs on the kitchen countertop. Cut each one into four lanes.
Share the filling onto the dough strips, sprinkle with kasseri cheese, half portion of halloumi and afew mints.

Sprinkle the pizza rolls with the remaining halloumi and bake the pizza muffins in the oven for 15-20 minutes until they rise and turn golden.
