Mini Quiche with Country Style Fillo Pastry and Feta Cheese
Preheat oven to 180 °C.
Smear with a little olive oil the special cases for muffins.
Take a country style fillo pastry ZIMI PSACHNON and grease it with oil well. Fold the sheet in half and again in half to form a square.
Place a bowl on square fillo pastry, whose diameter is bigger than the diameter of the casesthat are going to be placed (at least 2-3 cm bigger).
Using the bowl and a sharp knife, cut circles- forming disks from 4 squared fillo pastries. Insert the disc into the case.
Repeat the process with the remaining squared fillo pastries.
FILLING
In a bowl, beat the egg with the yogurt. Add the grated cheeses, green onions, strips of country style fillo pastry, the sweet chilli, pepper and mix. Distribute spoonfuls of the mixture in the cases where the discs from fillo pastries are inserted.
Bake the mini quiche for 35-40 minutes, until the filling thickens, to obtain a thin and shiny golden crust and the fillo pastries turn golden brown.
Serve them lukewarm. They can be served as a starter or even as a main dish accompanied with salad. If we want, we can make a bigger pie as a tart to be baked in a round pan (or tart pan) with a diameter of 26 cm.
